I know that it is possible for administrators (or those with equivilant prvileges) to add another user's mailbox to their own...But is it possible to block this feature, or get a notification that an administrator has added your mailbox to theirs?

Unfortunately I do not believe so, all you can really do is limit their exchange permissions.
