I have a very, very basic question.
How do I go about assigning lines to pools?
I currently have ARS pointing to pool 70, and the pool is cycling through 7 different lines, 801-808 i need to remove 805-808 from pool 70.

At the "BIG PHONE", the MLX-20 that's used for programming:

Press MENU > System Program > Exit > Lines & Trunks > Pools > Enter Pool Number (70) - Press the button of the lines you want to remove.

Understand this, the buttons on the phone ONLY REPRESENT LINES in this mode. So, to remove 805, you press the TOP BUTTON on the FAR LEFT, 806 is the BOTTOM BUTTON on the first row to the right (Above and just to the right of the UP Volume control arrow.) 807 is above 806 and 808 is above 807.

OR, press "Entry Mode", then DIAL 805, Remove, 806, Remove, 807, Remove, 808, Remove, then Inspect to make sure the lines you want are still there.

The phone that i have available for programming is a 4424LD+ or WinSPM. I don't want to assign the lines to buttons, i would like ARS to automatically cycle through 801-804 when you press "9

Merlinman and TTM are telling you how to remove them from pool 70, this will not assign or delete them from buttons, but into or out of pools...this will not change your ARS patterns. You just use the button presses to do the change.
