Apostrophe being insert in emails

When I send emails to another employee within my company to other staff they receive my emails with apostrophes like this 'jon@domain.org' is there a way to fix this as it causes problems when sorting emails as sometimes it sends them without apostrophes?

I am using Outlook XP and the reciever is using Eudora

I think this could be by design in Outlook-if you look at any mail that you have sent(sent items) you will see that the name or email address is placed in quotes. Don't know if you can change it. Looks like eudora keeps it for some reason.
