Given a PowerMac 7100 (NuBus) - is there ANY way to get it to support USB ..?

Whether it means an intermediate board / device - matters not, as long as one can end up with a USB port or 2.

I know there are PCI boards that give two USB ports but as for NuBus ...?

Creative Solutions makes a NuBus-to-Serial card. You could install that card, then use a Serial-to-USB cable which can leave you with one or two USB ports.

Does creative solutions have a website? I tried searching yahoo and didn't find it. Also, has this actually been tried or is it just speculations?

Doesn't the 7100 already have serial ports? That's what those connectors for the modem and the printer are, no?
So if either of those are unused, then just get a serial to USB adapter as JaySS suggests...
Or perhaps there are ethernet to USB adapters? Or SCSI to USB adapters? I never heard of such, butcha never know...
