I'm doing research for my coop and am wondering if anyone reading runs Catapult on any version of Windows Server? I am thinking of trying SBS 2008 Standard or the new Aurora.

Any feedback greatly appreciated - Thanks

Although they push the appliance server for Linux because of stability, it will run on any of the Windows platforms. For specifics, I would suggest contacting their support team.
Many of the resellers put it out on MS platforms for affordability for the end user. Stage your network then load the CD, it installs Sybase for the RDB, you get to pick if you are loading a server or WS. It is fairly straight forward.
As with any MS product, there will be tweaks here and there to get it as stable as you can. Make sure you have high end hardware, and maximum amounts of memory. It is a resource hog and pounds the hell out of the network with tons of traffic.
