Anyone know how to connect to a remote computer in this scenario?

Does anyone know of any fax software that will allow me to receive fax and data so that I can also dial in with pcanywhere or "remote desktop" without any user intervention on the remote computer?

Not sure what you want but if you put pcanywhere on both computers you should be able to remote into it.
 
The main problem is, which I have with using Symantec Winfax Pro, is that winfax pro will retrieve any incoming call, and not hand over a data call for pcanywhere to use. So I cant connect unless the fax software will hand it off to the remote desktop software.

Or if you can suggest a not to expensive (no-user intervention) modem switch for fax and data.

I think this is called "call discrimination" - the computer being able to differentiate between a fax and data call.
