Aloha TS - Chef wants me to use modifier menus as submenus

So I am pretty damn sure this is a bad idea for a slew of reasons. But the GM wants me to enumerate them.

(To better clarify what the Chef is asking for, is to have a menu button that says for example "lunch" and then an item button that says "Beer" and then that Beer item has a modifier group called "Beers" and all the modifiers are the actual beers we sell.)

a - Besides the sales reports being a damn mess, what would be some other reasons this is a bad idea?

b - Am I wrong and this is a totally fine way to create submenus?

c - Is there some way I am not familiar with creating submenus other than custom submenu panels (which I am in the process of learning and see at least that designing them takes some time.)

You could Pull this off by using panels as your submenus. You would then be able to link Buttons to submenus
SO first panel would have Lunch, Beer ect. Then when you click on that button it would bring you to a submenu panel for those items.
Product mix would still be fine, as would sales.

Not sure why your chef cares how the FOH looks. Seems they would be more concerned how the chits print in the kitchen and bar. As well as how the items ordered are modified.
