What is a manager doing when they transfer items from ticket to another ticket, then close the first as an empty table? Need to know-manager suspected of embezzlement and trying to calculate amount taken.

We already have the deleted checkouts and voids-just trying to figure out the deal with the transfers.

rokstar mentioned this in a previous post in 2006. thanks for the info.

Tranfers don't really even matter if they are deleting checkouts, opening cash checks, deleting items then running new checkout. For legal purposes run an audit report on the above 4 functions.

The transfer part is probably just an unneeded step in the process unless you reconcile every shift and they are transfering stuff to someone elses shift.

Uh no. Excessive transfers is theft!
It is the floating tea scam.

Ring me up and take my $50. Transfer 4 - $2 teas off my check to the next table, then close my check for $42 instead of the $50. Server just made an additonal 8 dollars off that table.

I understand the drink scam. This is entire orders. Food orders are sent to the kitchen via aloha. Just wondering if this possibly follows under the same line as drink scam. We are trying to validate the amount taken before we present to the police & insurance co. (we are talking thousands). We just want to be right before we accuse.

In that case, the kitchen would have to be in on it, or unwittlingly remaking food from duplicate chits or without chits because the manager is calling it back orally. Question them. I have seen it.
More and more restaurants are using dvr camera systems, the ones that integrate with the POS are even more helpful, but it can be accomplished with out the integrated by searching times on the dvr that match times on the questionable receipts.

I'd love to hear back if you had any luck getting the police to take the case against your idiot embezzling manager. I've found most police departments simply won't get involved in taking an internal restaurant case to the D.A. Too many variables and an attitude that it's your money, you figure out how to keep it. Please let us know how this works out, good luck.
