I have 2 installations of XP, one is XP Home and the other is XP Pro, I have a dual boot setup.

XP Home, was my first install a few years ago. I used Safemode to get the security tab and then set all my drives to allow only my user account to access them.

Since installing XP pro a few weeks ago I have wanted to allow it to access those drives as well. How do I do this? I made an attempt at it by restoring one of my drives security so that anyone could access it, XP Pro was then able to use the drive but did not offer me a security tab, even with the simple file sharing tab unchecked.

How should I be setting the drives security so only my account in XP Home and my one in XP Pro can access the drive?

Are you allowing "System" to fully access the drives?

Are all drives using NTFS?

See if any of these are useful. As previously stated firstly you must turn off "Simple File Sharing" in Folder Options/ View to access the Security tab (or use Safe Mode).

Can you just add "everone" with full access?

You dont say that you want to lock it down, you just want both installs to get to it.

The 2 installations have their own set of securities (XP Home permissions are not in force when running XP pro) - so you'll need to set explicit security in XP pro set up, possibly after taking ownership of the relevant object. As Linney asked - what filestore? If no security tab in Pro even with simplified sharing turned off, suggests its fat32 (if we're talking about a drive).
