We want to allow a certain group of users to create and name folders appropriately on the server but not have access to delete, I set the security permissions as I thought would work (using the advanced button) but when I remove the right to delete it also takes away their right to rename the folder.

Allow users to create and rename folders but not delete

Within the advanced features you will want to look atht e drop down that defines the scope of the setting. Look to set the option for subfolders only.
