What is the best way to setup a user who wants a softphone on their PC and a softphone on their iPhone. no deskphone required.

its just in the MiCollab setting their are only two options: deskphone or softphone.

I have created two UC Endpoints but only one is registered on the PC Client?

Guessing you have MiCollab. Using the Sip and setting used in multi devices should get you headed in the right direction.
