Our DBAs just installed AdventureWorks for us and the table names are case sensative. The explanation I received concerning this was:

"There's a large number of objects (mostly check constraints) that are dependent on a case-sensitive collation, so it can't be changed."

Does that sound right?

Our production database table names are not case sensative.

Although I don't normally work with case sensitive collations, to me what yor DBAs told you makes perfect sense.
If the database you are talking about was created with a case-sensitive collation ,the schema itself as it is also stored in database tables (system tables)as data ,will also be affected therefore the table/column names being case sensitive as well.
Once the database distinguishes bewteen two values of different case any subsequent change could cause problems at all levels , Uniqueness(although most of these would probably be numeric thus not affected), referential Integrity and check constraints. The latter could contain all sorts of conditions which could fail or give the wrong results if the collation was changed to case insensitive.
In other words you would have to review every single of these constrainsts.
