ADS Design advise needed

Hi, Im looking to design an AD structure for my company. We have three different sites (each in a different country) and I was wondering which way to go. I was leaning towards one forest and 3 domains. We access data between each site so I think we should have just one forest. The other question I have is domain controller related. If I do go with the 1 forest 3 domain OU structure will I need 2 dc servers? One for the root and the other for the domain?

I think you have some of the terminology confused here. If you have a forest with 3 domains, you will need a minimum of 3 domain controllers. One for each domain.

You may want to consider one domain with three sites configured.

what i meant to say is one dedicated forest and 3 child domains.

Can you explain why the one domain would be a better choice?

each site already has a dc server so I would like to utilize them
 
it would work just a well using one domain and three sites

just setup your sites for proper replication and make sure you have a GC at each site.
