Adobe Illustrator eps files and Pantone colors?

This is for a 2 color job using pantone colors. When I save an eps file out of Adobe Illustrator 8 that has a Pantone color it saves it as a cvc color. Quark uses cv. As a result, I get 2 pantone colors in the color window in Quark. A cv (that I used in the document already) and a cvc from Illustrator. The printer told me to delete the cvc color in quark. However, when I do this I get a warning message that tells me that an eps file is using this file and that the job might not separate properly. What do I do?

Personally, I would delete the cv color, and when Quark asks what to replace it with, choose the cvc color. If you did it the way your printer suggested, you wouldn't be able to separate out the Illustrator spot color.

The general rule is, when you are referring to one spot color, make sure it's got exactly the same name in every file. As it's easier to change the Quark color than to change the Illustrator color, I would suggest doing it in Quark.
