Address Book - Add Users

I am very new to SP, so I apologize for my ignorance. I have a site that I am trying to add users to via the "Address Book" method. This works great on my dev environment which is on the same network as my desktop. When adding users it fills in the email, username and display name without a problem. When I try this on the production environment, which is NOT on the same network as my desktop, it does not automatically fill in the username portion (it guesses at the display name from the email address). Both environments are standalone systems (not running AD). All users are local to the server. I understand that it will not find the appropriate username if the user in the Address Book does not have an NT account on the server. I guess my question is..."What is SP using to key off of to pull the username from the Address Book?" and "Can this work if the server is not part of a domain?".
