I am somewhat new to MS project and have been stumbling through several issue but I have not been able to figure out how to add in a Resource like a work cell or production area to a task so that I can avoid double booking the resource location. I want to add this as a resource so I can then use the resource graphs to see the loading.

You can create resources by going to the Resource Sheets view and adding needed resources there. The only type (work, material, cost) resource that Project looks at for overallocation - or double booking - is a work resource.

Julie, that is consistent with what I have found but what I would like to do is have a task that has fixed work of say 40 hours, with "worker 1" assigned to the task, and a work location of "lab" assigned to the task. When I try to do this using work resources for both the worker and the work location draw from the 40 hours and the duration changes to 2.5 days instead of 5 days.

Ensure the task is not effort driven when you assign the second resource. If you are going to be using Lab+Worker(s) consistently you may wish to change all of your tasks to non-effort driven. Select all tasks, in the Project menu choose Task Information. Select the Advanced tab and de-select the check box for Effort Driven. Now if you assign more workers (or the lab) to the task the duration will not decrease - Project will just calculate the work for each added worker.
