Add Partition / Move Squid Cache - IPCop

I'll be up front here. I'm a complete newb when it comes to *nix systems. I downloaded a VM of a pre-built IPCop install and everything is well, but I don't think that the included partition for the AdvProxy / Update Accellerator feature is big enough. Windows updates and service packs can be hundreds of MBs.

I successfully added another VM disk, then partitioned and mounted the drive as /squid. Now I'm stuck as to how to set the permissions on it and move the squid cache from its current directory. So here are the questions:

1)I do know that squid runs as user nobody, but how to I ensure that the user will have access to the folder? Syntax for CHMOD is unclear to a W2K3 command line user.

2)How do I move the cache to the new partition / mount.

BTW... I have figured out how to use VI (Not well, but functional), so if that's part of the solution, fine.
