ACT! Database changes

When I try and create a new type of database, or edit a current one, it won't let me change the options in the drop down box or create just a plain field to type in.

What am I doing wrong?!?!

1. What version of ACT!?
2. What are you trying to edit?

I am using ACT! 2007.

And I am trying to edit what the options to pick from in each of the dropdown menus. Or just change that altogether to just a box to type in the info.

Example:

Customer Last Name Drop down box (I dont want it to be a drop down box anymore)

Ring Size Drop down box (need to include all the different ring sizes possible in the drop down box so the correct size can be selected)
 
These can all be changed in Tools | Define fields

Customer Last Name:
I assume you created this new field instead of using the Last Name field that's already part of ACT!, as the standard Last Name field has no drop down.
Why did you do this?

Ring Size:
In Define Fields, you need to find the drop down list it's using and then modify that list

Obviously I created the new field because I'm stupid.
How about because I couldn't find anything near what I needed in the current layouts.
I'm dealing with a completely different client base than when I used this 6 months ago. At that time it was like plug and play. I didn't have to do anything to it. All the layouts it comes with are such crap compared to what I need now.

So excuse my stupidity at trying to create a whole new layout and not understanding how.

And btw, the last name thing was just an example. How about one for spouses first name? I need a box to type in next to that. How do I get it???
