ACT! 2000 Sales Opportunities Product/Type Dropdowns

Hi Everyone, I have 300+ ACT! sales reps in the field. Our sales management has requested that the product and type drop downs for sales opportunities be updated to new values. I'd like to change the lists but not impact the current sales opportunities. Or find an easy way to convert all the existing sales opportunities to the new values. Help!
