Hi

I want to give my remote users access to our mail servers via ppp. Can anyone point me in the direction of some documentation which explains how to set up my Linux box to accept incoming PPP connections?

Look at the PPP how-to, you have to enable your users as ppp users, I think you make them members of the group "ppp". A great tool for this and many other services and attributes of your system is called "webmin" you can get it at Check it out.
