Access entire database before cutover to new application

We are moving to a new building and different communications system (Nortel to Mitel), and I'd like to download all available data just before the cutover. Have been working with individual tables through Excel > Import External Data > New Database Query on a monthly basis, but how do I download everything at once for possible future reference? Thanks!
