If I have, for example, a 20 page PDF, there must be a way to break it down into 20 individual PDF's, other than extracting page by page. i am using version 6 Pro. I cannot get past the fact that 'extract pages' is not in the list of batch processing commands.

Lots of 3rd party applications for this. Have you done a Google search?
Even though it isn't in batch processing, you can extract pages with Acrobat's built-in JavaScript engine.
