You're standard boot.ini file, which an example can be found below, tells the system using ARC parameters, where on your hard drive sits various operating systems along with other parameters that can be added to optimize the os, like the addition of the command console as seen in the example.

Microsoft has a Knowledge base article that may help you:

&

------------------------------------
[boot loader]
timeout=11
default=multi(0)disk(0)rdisk(0)partition(2)\WINDOWS
[operating systems]
multi(0)disk(0)rdisk(0)partition(2)\WINDOWS="Microsoft Windows XP Professional" /fastdetect
C:\CMDCONS\BOOTSECT.DAT="Microsoft Windows Recovery Console" /cmdcons

Basically yes - but you don't need to do so much. Presume 2k server installation is to damaged to repair - so just format its partition from one of the other operating systems. Also save the files ntldr & ntdetect.com in the root of C: somewhere else (doesn't really matter - they're on XP install CD). Then boot from 2k server install CD and reinstall back to formatted partition. Then you'll need to restore ntldr & ntdetect.com to get XP to boot (both 2k's should be ok - you may need to edit extra 2k server entry from boot.ini). That's it.

PS. Make an insurance boot floppy first. Copy ntldr, ntdetect.com and boot.ini from root of C: to newly formatted floppy. This will boot your installations if the boot sector gets damaged somehow.
