I recently installed the 8_Recommended patch cluster. Once it is on there is it safe to remove the extracted install directory? Is there any benefit other than not having to download it again, to saving it.

You can safely delete it, and I don't see any benefit in saving it as it will be updated with new changes should you wish to re-apply it.
