We have an HP 8150dn printer with the following setup:

Tray 2 is letterhead
Tray 3 is plain paper

Every night we run a print job that prints the first page from tray 2 and the second from tray 3. Occasionally we only have a one-page letter, so it only pulls paper from tay 2. As a result tray 2 is used more than tray 3.

What I am trying to find out is whether there is a way to tell the printer to stop printing when it runs out of paper in tray 2. That is, if it runs out of paper in tray 2 I want it to stop, instead of continuing to print by only pulling paper from tray 3.

If the application you are printing from does not override the settings, you should be able to set different paper types per tray through the 'tray' menu item through the front panel.
 
Yeah that's been set and done. That's not the issue. I want the printer to stop the print job when tray 2 runs out of paper instead of it pulling from tray 3 and printing.
 
If the paper types on the control panel setting are different between the two trays, and it's not automatically stopping when one of the trays is empty, then your application settings (control codes that are transmitted to the printer at the time of the print job) are overriding the front panel controls.
