The dialer interface is associated with the physical interface BRI0, and the speed of the ISDN line is 64k, but I'm sort of confused by these two readings, so my question is which one is the router using?

BRI0: MTU 1500 bytes, BW 64 Kbit, DLY 20000 usec,
Dialer1: MTU 1500 bytes, BW 56 Kbit, DLY 20000 usec,

ISDN uses out of band signaling so the full 64K channel is available for data. Other methods, including asyncronous modems, use in band signaling which steals the least significant bit of every 8th frame reducing BW to 56K The Dialer interface doesn't know which you're going to use, assumes the worst and uses 56K.

So are you suggesting that unless I set the bandwidth to 64k at the dialer interface the dialer will use only 56K

No, the BW listed is only for routing metrics. I really wouldn't worry about it.
