On a server platform with 64-bit CPUs, if I install ESXi can I run both 64- and 32-bit guest environments, without interoperation issues? We're looking at an oversized server for Exchange 2007 and a couple other small app servers, but a couple run legacy software that aren't certified for a 64-bit environment.

Yes you can, as long the processor is 64bit it can operate both 32 and 64bit code (and hence OS's).
