Does anyone know of an adapter that allows for running 2 separate (not bridged) 4-wire digital Avaya phones from a single RJ45 jack ?

BR851D is the one that you are looking for. Typically, used for 2 ethernet connections. Gives you w/o w/gr pairs on 1236 of one side and w/bl and w/br pairs on the other side in positions 1236
