If you have multiple processors, do you have to go with the per-processor licensing, or can you still go with device/user licensing?
 
Either one depending on your needs. This FAQ faq962-5153 also has some good info.

as I understand it you don't need mulitple licenses for a single multicore CPU.

e.g. one quad core CPU = 1 CPU license
or you could use CALs instead of course depending on your model.

 
Correct, if you are using CPU licenses it's one license per physical CPU.
