1 domain 2 servers and mx records

Is there a way to have emails send and receive from 2 different servers on the same domain.
sample.com- 10.1.1.10 (Centrinity Open Text server)
sample.com- 10.1.1.11 (Exchange server)

I would like to do a slow migration from a Centrinity Open Text to Exchange.I need the users to still be able to access there emails from the new Outlook-Exchange and for emails to continue to come in on the old server.
 
on the exchange side, you can create a connector for certain traffic (deignated for the COT server) and point it at the COT server. I have no idea about the other direction. you will need MX records to resolve to both servers.
