1 domain 2 different mail servers

I want to install a new exchange server and do a slow migration of users. Is there a way an email can be sent to jon@example.org and it be retrieved by two different email servers
1:Centrinity FirstClass (old)
2: Exchange (new)

Is as simple as adding another MX record.

No but you could create a connector between the 2 boxes potentially - I don't know Centrinity but other mail servers can hook up with Exchange in a similar manner.
