You can apply the access list in both directions:
int ser 3/0.1
access-group 101 in
access-group 101 out
int ser 3/1.1
access-group 101 in
access-group 101 out
Or you could apply the "in" on the other interfaces on the router (fa 0/0, etc).

The access list looks good. It would be applied to the sub-interfaces and the same access-list would be applied using the "access-group 100 in/out"

The in ou out depends where the servers you are trying to protect...
What address are the internal devices using as the default gateway. Were they using the ip address of the firebox? If they were, then they can't find the default gateway.
Change one of you devices to use the 2611 Fa 0/0 (192.168.1.1) as the default gateway and see if it can't get to the...
What kind of serial cables are you using? Attached to one router needs to be a DCE cable while the other needs to be a DTE Cable.
On the router using the DCE cable you need to configure a clock rate 1300000 (to emulate a T1).
Once this is set up then the clocking should work and the circuit...
I am looking for some pratical examples of configuring QoS (MDDR/WRED/RED) on a GSR.
I have looked on CCO and understand the technology. I know that each Engine type handles QoS differently. I would like to see configuration examples for Engines 0, 1, & 2.
