Have you tried to manually connect to any of the domains that you're having problems with? If you'll set local echo and determine what type of replies your getting back from the other end it may help you figure what the dropped connections are for.

I've seen this problem numerous times in my environment of 17 exchange servers running IM and it's always related to a proxy.
Are you using any type of proxy server? If so, add the SBS server in your bypass list using the fqdn of the server. IM uses the proxy settings from IE.
