Yeah, that's the funny thing. It does check out the server and mailbox names. And the user can ping the mail server. But when they try to open the mailbox, the error comes up.

Updated info., still same problem.
I made sure user had our mail server addresses and names in the hosts file.
I had the user log into another PC in the same location, connect through VPN and set up email account...
Getting the following error for remote user, connects to exchange through VPN "Unable to open the folder. The information store could not be opened."
I can log in as that user on a PC here in-house and access mailbox just fine.

Do your users have local folders set up on their PCs in Outlook? If they don't have the mail set to be delivered to their mailbox on the exchange server, but rather to a Personal Folder, everytime you try to synchronize (send/receive) the new messages will appear and then disappear right before...
You can add another user's mailbox to your outlook set up. With Outlook closed, go to the Mail Control Panel, email accounts, View/change, change, more settings, advanced and there you can add another mailbox to your outlook and can view the user's folders.
Sorry you have to do it for that...
