It was in fact linked to the boot sequence in the BIOS. For this particular model it is necessary to activate either the "Removable drive" (FDD) or "CD-ROM" entries in the boot list before setting their rank in the boot sequence...

I'm back and have successfully cloned my IDE system disk to a SATA disk, no trouble at all.
My advice to anyone attempting this is:
- install the SATA drive first and make sure Windows can work with it properly;
- if using Norton Ghost 2003, only use the "boot from floppy" method...
