Your ras server can be accessed over the internet using PPTP protocol and that is VPN.
so you talk to your ISP or see how you can make your ras server be on the internet and allowing only PPTP connections and your users can access your server from anywhere in the world if they can get on...
Obviously there is a conflict of hardware resources on your system, that triggers with time, the most known one is between the mouse and the modem. And you did say what you Ram is like, when this happens do u have so many windows open?
also check you HDD space available for the page file.

but tell me how you separate the boot files from the system files.
you know when u are installing the only option given is to put it in C:\WINNT directory, then how do u separate them.

use device.log to get more information if you have not done that.
and i'll advice you remove everything and start again from scratch, there maybe something u are doing wrong.
