Before posing this question I did in fact convert my disks to dynamic, of course, because only through dynamic disks can you have software raid.
However the link you've provided doesn't support your view that software RAID is possible on Windows XP based on what I see...

I asked in the Microsoft Forums and the response I received was:
"Mirrored volumes are not available on computers running Windows XP. You cannot create mirrored volumes or RAID-5 volumes on Windows XP Home Edition, Windows XP Professional, or Windows XP 64-Bit Edition-based computers."
You can't have more than one SBS server ina domain. So no you can't do that. Your best course of action is to purchase a SATA raid card and use SATA drives with hardware RAID in a workstation.

I found an adaptec controller in one of our older PCs and was wondering if it "does" RAID.
I understand that it controls SCSI disks, but it's unclear to me how RAID does or doesn't fit into the big picture.
