I've run into this issue before. Ensure that there are no other periods that overlap that are also tied to an auto menu level set up. If a period overlaps, that's fine, but if that period is also being used to change a menu level, you must set that period to end before your new period starts.
Go to System>Periods and add a new Period, name it what you would like, then select the appropriate date and time. You won't be able to do actual dates, just days of the week. Then create your discount and on the General tab, select the period that it works for. This is located on the right side...
Wildbar is right, however I ran into issues of the discount not always applying properly to the check and customers accusing us of false advertising. I've had more luck using menu levels and have the menu level change per day with the prices adjusted accordingly.
