Look in Preferences, under Page Display, and change the Zoom field to 100%. In Acrobat 6, it's called the Default Zoom. I don't know where it is in 5. Oh, and perhaps you should do this without documents being open.

This may not be such an issue, depending on how the image will ultimately be viewed. Viewing distance is also a factor. Billboards are printed at 10 to 20 ppi, because when you see it from a distance, it will resolve into a sharp image.
