    how to print text in black and images in CMYK?

    I've created a pdf from the Publisher file specifying CMYK (using Tools),which the commercial printer says shows good colour for all the images and graphics, but he wants the text to be in single black. He says even the text with the images is blurry. How do I correct this? Thanks.
