The best way to accomplish this feat is the make sure you have a good backup. Also backup your raid configuration.
Replace all your drives with the new ones, configure the new array, load the OS and restore the data from backup.
I am not sure that replacing the drives 1 at a time and letting...
I would go with the Raid-5.
Raid level 0 will give you more space, but you have no redundancy, That is if a drive should fail you will lose data on Raid-0. Thus taking your operating system down.
Remember you must have at least 3 physical drives or more for Raid-5
I had the same issue. Fought with it for weeks.
Replaced the adaptec scsi driver with an older version.

My throughput went from 30mb/min up to 850mb/min on my faster clients and 350mb/min on my slowest client machine.
