I should also note that we turned of the debugging/log option and that improved things slightly but it is still too slow for our food service team when they are having a busy day. Thanks in advance for all of your help!

This happens on all types of payments. We accept cash, credit/debit, and we use GEM pay to charge to our employee's payroll via badge swipe.
