From your description, it sounds like the access denied message they get is because they are trying to do a move. In the first part of the move, the data can be placed in the destination directory with no problem, but in the second part of the move it cannot be deleted from the source directory...
Are you by chance using an Intel nic? I had the same problem occur intermittently. I was using an Intel Pro 100 or something like that and decided to try an old 3com just to see what would happen. It worked on the first try and I haven't had a problem since.
