Dual-booting Vista and XP

Color Laserjet 2840 for Vista
With XP Pro I had a seperate printer set up for black and white. Now I just have one printer in Vista and it prints WYSIWYG. How do I set up a seperate printer for just black and white? I know how to chenge the settings in the printer to not print in color but that isn't what I am interested in.- warmlf
