Setup an FTP server with anonymous access. I used our Windows 2003 server and then added the built in FTP server.
As we only have one type of phone (5621/5620) I replaced our 46xxsettings file with the following:
SET FTPUSERSTAT 1
SET FTPSRVR...
Create a Short Code in The IP Office Manager as below:
Code=*99
Feature=Voicemail Collect
Telephone Number=?
Then dial *99 from any phone and enter:
extension#
passcode#

The office have been using the phones for a while. I don't think they change the phone options and I believe they probably all ready have a number of Speed Dials set.
As I have only just setup 46xxsettings.txt and 4620data.txt there is currently no backup of any of the phones and I don't know...
