Exchange 2007 Standard is for smaller orgs with less mail storage requirements.
Exchange 2007 Enterprise is for larger orgs with more mail storage requirements.

Exchange 2007 CAL Standard is for normal features.
Exchange 2007 CAL Enterprise is for orgs requiring additional features such as Unified Messaging.

If you purchase Exchange Server 2007 Enterprise, this does NOT mean you need Exchange Server 2007 Enterprise CALs.
