The creative dept of our company just bought an xsan. One of the "mac" guys setup a little wiki page that he would like the whole company to see. The xsan server is part of workgroup and not our domain. I have created a host and ptr record for the server and its directories are browseable.

If the host name of the server is xserve01 but the website that he created is called ourxsan.com, how do I configure DNS to point all of the requests for ourxsan.com to xserve01? Or is this a configuration on the Mac web server?

I'm not exactly sure but I think you will need to point the DNS at the IP of the Mac Server.

Then, on the server itself set up a virtual server via the Server Admin tool.
This should be set up to point requests for the domain to the relevant directory on the server.

Sorry if that's a bit vague. I don't have access to the server admin tool at the moment, but it's quite simple to find what I'm talking about!
