We have incoming analog DID's and I am trying to figure out how they work (we're changing to an asterisk phone system). Does the analog DID basically act like an analog phone connected to us? I know that when you dial one of our DIDs from the outside world you can hear the telco using dtmf to enter the four digits of the DID.

The DID circuit coming from your Vendor is a dry cable pair, the switch provides Battery on one side of the line and Ground on the other side.
This is why you can go to the RJ and place your Testset across TIP and RING with Telco lifted and dial into the switch.
