I am working on a 8.1 server edition.

I have tried to make this work in multiple ways but I can't get it going.

If I call into a hunt group called Triage, the queued entry point has a menu item with 1 checked. There is an entry prompt on that menu that allows you to press 1 to leave a message. The 1 points to a goto action that is triage.leave. The triage leave entry point has a menu where I have 1 that goes to an offsite phone number or timeout goes to a leave mail action that has triage as the mailbox.

When someone calls the hunt group and presses 1, they get the prompt from the triage leave menu. The problem is the message is about 50 seconds long but it cuts off at about 30 seconds or so. At that point, it starts the prompt over again. This time it runs through the whole prompt and gets to the voicemail box.

Can anyone point me in the right direction?

You cannot use a goto action within a queue action, you must stay in the queue call flow and handle the call there.
Within the call flow you can transfer the call to any destination outside the VM Pro.
So within the queue call flow you have a menu with two options ( mandatory!! ) a option 1 and a timeout option.
Connect the option 1 to a second menu were the 1 diverts to the external number and the time-out goes to a leave mail action for the Triage mailbox.
The time-out option for the initial menu is left unconnected in order to keep the caller in the queue on its original position.

That gets it to the voicemail correctly but the message on the second menu still gets cut off after 30 seconds.

That is because your still queued timer on the announcements tab is set to 30 seconds.
This is normal behaviour and a queued message should not be 50 seconds long at all.
It is better to rethink the structure of this call flow.

BAZINGA!

I'm not insane, my mother had me tested!

tlpeter is right as usual, it is not fun for a caller to get into a queue and then hearing it is better to leave a message is a pain in the butt, i would hangup and call someone more helpfull....
