I have heard there are a few things you can do to help reduce spam or getting your exchange server taken over to replicate messages for spammers.

Any tips or documents on what to setup for Exchange 2000, like disable the guest account in exchange from sending, having complex passwords, what about relay, If I turn relay off Entourage in Mac Office wouldn't send out of the office.

We've just implemented Symantec Brightmail this week. Since putting it in place we have discovered the over 40% of all mail coming into our organisation was either spam or viruses(worms). I was amazed by the quantity. It's definitely worth getting a decent spam removal tool.
